Apple Cider Griddle-Cakes

Happy Fall!🍁Fall is definitely my favorite time of year! While pumpkin spice gets lots of attention these days, all things apple and cinnamon are my favorite! Growing up in Massachusetts meant that apple picking was a must in October and I loved the cake, pies and crisps that followed. I love apple pie so much, I make one instead of a cake on my birthday!

We started “Pancake Sunday” so many years ago, I can’t remember a time without it. I enjoy making the pancakes as much as my boys enjoy gobbling them up! Our favorite add-ins are chocolate chips and blueberries and of course, diced apple is also a delicious option.

This recipe is based off of my favorite griddle cake recipe but I sub apple cider and add a couple extra spices. Feel free to use the spices that you prefer. I also want to note that depending on what we have on hand, I always sub 1/8 cup of the flour with hemp seeds, ground chia or ground flax. If using chia or flax, I add an extra 1/4 cup of good ol’ filtered water. I also like to add 1/8 cup of collagen to boost the protein. I have made this recipe with my favorite Gluten Free Flour and they are delicious and fluffy! If needed, I add up to an extra 1/4 cup of liquid to thin it out.

Mix together dry ingredients. Beat egg with other liquids and pour into dry ingredients and mix until just together. Do not over-mix or the pancakes will be flat and tough. Allow mixture to sit for 10 minutes, it will rise and be full of bubbles! I use coconut oil, beef tallow or avocado spray to cook the pancakes because we need to limit dairy, but they are Delicious cooked with grass-fed butter! 😋
