Chocolate Brownie Bites
These brownie bites are a favorite snack for us and it’s a fun recipe for kids to learn to make on their own! One of my goals is to not only teach and encourage my kiddos on nutrient dense whole-food deliciousness but to empower other Mums to do the same! Part of my health coaching program includes Mums taking back their kitchen and getting back to the whole foods that God created for us to eat. I believe we’re so far removed from what real food is and we’ve been convinced that convenience is priority over long-term health. Providing super yummy nutritionally packed whole-food simple recipes that are easy to whip in minutes is so important to me. I’d say these brownie bites fit the bill! Both kid and adult approved!
We discovered “bites” when my oldest was 15 months old and he was having difficulty with textures, flavors and projectile vomiting was a daily occurrence, so much so that he would rather not eat at all than eat what we were having. We would later learn that he struggles with a feeding disorder, common with autism. We’ve come so far in our eating but bites are still a favorite snack and a great way to pack a nutritional punch plus you can add or omit ingredients very easily. I often use my food processor to help us with certain textures to make the bites more palatable.
Most bites have an oatmeal base and a nut butter (which is delicious) but I wanted to create something that had neither for those that can’t have those foods and to give us a different flavor profile and nutrient base.
- 1/4 cup *chocolate protein powder
- 1/4 coconut flour
- 1 scoop Vital Proteins gelatin
- 1/8 cup flax (sub chia for an added crunch!)
- 1/2 tsp cinnamon
- 1/4 tsp sea salt (I use Redmond or Celtic)
- 1/4 honey
- 3/4 cup of favorite nut butter (We use Sunflower Butter)
- 1-2 Tbsp of either water or preferred milk
Like most of my recipes, I start by mixing all the dry ingredients in one bowl and all wet ingredients in another, then add the dry to the wet, mixing until combined. I use a small scoop and make 20 bites. I put them in the refrigerator to set up a bit because that works for my boys, but I find them to be delicious while I’m making them!
