Chicken Bites Seasoning Blend

You guys. This recipe came about on a whim when I was transitioning away from breaded chicken tenders. It has evolved a little with the addition of this and that, but dang if I don’t say it is a winnah winnah, chicken dinnah! We all love these little bites and I make them every week.

Perfect to be eaten right out of the oven or leftover cold, wrapped into a tortilla with a colby/cheddar blend, added to some sautéed peppers and onions for a fajitas bowl, in a taco shell (I love Siete brand!) with feta, sweet potato and radish, mixed with roasted cabbage and topped with sriracha, in a giant salad, or just a pile on your plate (for breakfast….yep, I love eating chicken for breakfast!)

I use this blend with 2.5-3 pounds of cut up chicken breast. I’ve tried this blend with baking whole chicken breasts and also in the crock pot, but nothing compares to cutting them into 1.5-inch bites and getting the seasoning on every bit. It’s just so yum. And the ground mustard? The best addition to the original recipe and I say a must-have.

Here’s the blend:

  • 1 tsp Poultry seasoning
  • 1 tsp dried thyme
  • 1 tsp fine ground celtic/pink salt
  • 1 tsp black pepper
  • ½ tsp ground mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp cumin
  • Dash of white pepper

Preheat oven to 400F. Cut the chicken breasts into bite-sized pieces, about 1.5” pieces. Add the pieces to a glass bowl and spray with avocado oil, stirring to coat. Sprinkle with seasoning, a little at a time, stirring to coat, then sprinkle some more and stir to coat until all the blend is used and all the little bites of chicken are covered in the deliciousness.

Spread bites individually on a cookie sheet covered in unbleached parchment paper and bake for 16 minutes. Allow the chicken to cool before storing in a glass container in the refrigerator. I pour the drippings from the pan over the chicken in the jar.

I can’t help but eat 5oz. of the chicken bites straight out of the oven, I just love them!
