Easy Greek Yogurt Dough

I am so excited to share this recipe! Like Animal from The Muppets, excited! 😊 Could be the endorphins from my workout, but honestly, this is such a simple recipe that you can easily make your own with your favorite herbs and spices while switching them up for different meals. It has become our go-to for burger buns and egg sammiches…or my son will just eat them all as is!

A couple of years ago, we road tripped it up North to see my parents and while up there we visited with extended family! I was catching up with my cousin, and he mentioned that he and his wife like to make Greek yogurt pizza dough! Say what?! I imagine some of you have heard of this by now, but I couldn’t wait to look up this gem!

Since then, I have made this recipe a ton! We all love it. It’s a great pizza crust or breadstick, but our favorite is rolls. Who doesn’t love a great roll?? This dough is made with clean ingredients and takes just about 10 minutes to come together.

  • 2.5-3 cups 2% plain Fage yogurt
  • 3 cups of flour (I use King Arthur ‘00’ pizza flour)
  • ½ tsp pink/sea salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp garlic salt
  • 2 Tbsp baking powder
  • 1 Tbsp olive oil

Optional – If you want some additional protein, I would suggest adding 2 scoops of unflavored collagen! I use Equip brand and it adds 28 grams to the total amount of protein, making each roll approximately 6.5 g protein, 16.6 g carbs and 1.9 g fat.

I have added 1 Tbsp of Italian seasoning when making breadsticks and pizza dough for added deliciousness! I think these would be really yummy if you swapped the savory seasoning for an apple pie seasoning blend and topped them with apples that have been cooked down with cinnamon and maple syrup. Excellent for your gut health!

Mix all ingredients together except the olive oil until it all just comes together, then add the olive oil. Please note that depending on the humidity, etc., I will sometimes have to add up to 3 cups of yogurt before it comes together. Eyeball it and don’t stress! This is when being in the kitchen gets fun 😊

At this point, it can be spread out for pizza crust. For breadsticks and rolls, I weigh the dough and then decide how many ounces I want them to be. For example, I usually get approximately 36 ounces of dough, which will give me about 18 2oz rolls or 9 4oz breadsticks.

For breadsticks – bake at 400 for 12 minutes, flip and bake for 3 additional minutes.
For pizza crust – bake at 400 for 10 minutes, take out to add toppings then bake for 5 more minutes.
For rolls – bake at 375 for 26 minutes.
